Sunday - BBQ Chicken and Cornbread - crockpot style - using THRIVE

Monday - Leftovers

Tuesday - THRIVE Tacos {using a mix of ground beef and taco TVP and then Instant Black Beans}

Wednesday - LYM Chat so keeping it simple - Grilled Cheese for hubby to make for him and the kids and I will have some Chicken Salad using the Freeze-Dried Chicken from THRIVE -- perfect for making a small batch up for my tiny little pouch!

Thursday - Pasta Lasagna and garlic bread

Friday - Adam is on his own with the girls while I go away for the night

Saturday - THRIVE Pizza {Using the tomato powder, Freeze dried meats, Freeze dried veggies and FD Mozzarella Cheese}  This is a family favorite - we love that we can all make our own pizza.

Monday Menu

It has been quite some time since I posted anything, but even longer since I have posted our menus on the blog, I am going to see if I can start doing that again.  We went to Utah last weekend (President's Day weekend) for a Shelf Reliance conference - it was SO much fun and we learned SO much.  That conference has dramatically adjusted our cooking - it has been so easy! I love not having to remember to take something out of the freezer - just go to our "store" and grab it off the shelf.

So for this week we are having...

Sunday - Chicken Taco Soup (used all THRIVE) including their new Instant Beans (ready in 20 minutes and no sodium!)  We also made a version of this soup with the taco TVP - Adam preferred this version, I liked the Freeze Dried Chicken version. 

Monday - Leftovers (we made a few things last week that we still have some of - BBQ Chicken & Cornbread - all made in the crockpot; and Shepard's Pie - using the Freeze Dried Ground Beef)

Tuesday - Broccoli Potato Cheese Soup (an entree from THRIVE)

Wednesday - Beef Stroganoff (using THRIVE) This is from a recipe in their new cookbook!

Thursday - Enchilada Bake (ummm... you guessed it using THRIVE - it really is that good!)  This is also in the new cookbook

Friday - Cooking demonstration at our place

Saturday - Cooking demonstration for breakfast - 10am & dinner - 6pm ... want to come? Just send me an e-mail!

Sunday - Leftovers

Snacks: THRIVE freeze dried fruit, THRIVE yogurt bits, apples, bananas, goldfish, cereal in a bag

Menu Plan Monday

With taking these two weeks off from designing I am actually getting my menu posted again!  Each week I fill out the menu sheet and we follow it about 70% of the time. I hate when it is too hot (seriously it is only mid 90's lately) to cook. So we end up eating simple or going out.  We have to stop that!  School starts tomorrow (Monday) so time to get into a great routine again!

Sunday - BLTs

Monday - Tacos

Tuesday - Cobb salad (Turkey, cheese, hardboiled egg, bacon over a bed of lettuce)

Wednesday - a crockpot meal of some sort. Probably with chicken just not sure yet! If you have an idea feel free to share!

Thursday - Grilled cheese -- got a great deal on some yummy bread at Target this last week and have some sliced cheese around too so.. with the heat this is a great dinner!

Friday - BBQ hamburgers with corn on the cob from Brentwood!

Saturday - John's Incredible Pizza Co. -- we have the Fun Pass for Rachel and Adam so they both get to eat free during their birthday month (nothing like procrastinating a little bit!)

The weather has shifted here -- it is now getting up to the mid-nineties now! Yikes I want that 60 degree weather back!  So with the change in weather some meals from last week did not get made as we went out to eat instead. I know bad me but... I have signed up for all sorts of "birthday clubs" with various restaurants. Well they start rolling in the first of the month so we start using them!

Sunday - Leftover Benihana's (mmmmm)  We always ask for the dipping sauce (mustard and ginger) to go - they bring little containers. With the extra sauce we can cook a little more steak or chicken as well as more vegetables when we get home to go with our other leftovers.  We still have more sauce so one night this week might turn into Benihana night again!

Monday - Chicken Enchiladas (we ended up going to Red Robin when this was planned last week)

Tuesday - Steak, rice, baked beans and salad
{make waffles}

Wednesday - BIRTHDAY night!  Uno Chicago Pizza

Thursday - Red beans and rice (no real recipe here - just an assortment of spices and a chunk of ham that is in the freezer)

Friday - Turkey and all the fixins
I have had a turkey taking up WAY to much space in my freezer and it is probably getting a little old - I got at Thanksgiving - so... time to cook it!

Saturday - Birthday Party for lunch and then leftovers for dinner

The kids start week one of two summer camp. Mom is probably more excited than they are!  So because of that I didn't really plan out each breakfast and lunch.

Menu Plan Monday

Last week I did have a menu plan in place but since I was not around Sunday, Monday or Tuesday it was never posted here on my blog!  Monday morning (early) I headed to Utah to meet up with Chelle and then Tuesday to a ScrapMatters picnic.  It was so much fun to meet the girls who you chat with so much.

This weeks menu has a bit more details. Since we are all home all day I need to be a little more planned out.

Sunday -
Leftovers

Monday -
B - Cold cereal with fruit
L - Leftover burrito (us) and Pasta (girls)
D - BBQ Chicken, corn on the cob, salad
{Sausage and Pork Chops out of freezer, make salad dressing}

Tuesday -
B - Eggs and sausage
L - Salad with sliced chicken
D - Pork Chops, mashed potatoes, applesauce
{Hardboil eggs}

Wednesday
B - Steel cut Oatmeal (Rachel has been begging for this)
L - Pasta chicken and alfredo sauce
D - Taco Pie
{Make muffins (blueberry & banana) and cookies}

Thursday
B - Hard boiled eggs and muffin
L - PB sandwiches with carrots
D - Tacos

Friday
B - Muffins
L - Quesadillas
D - Chicken Enchiladas, Rice

Saturday
B - Bacon & Eggs
L - Out
D - Pigs in a blanket

Snacks
Apples
Bananas
Frozen Blueberries
Popsicles
Smoothies
Cheese Nips Crackers

menu plan monday

Well it is still Monday... just a little on the late side!

Plans for this week are:

Breakfast/Snacks - Quesadillas, Apples, Pears, Bananas

Desserts - Ice Cream, Granola with yogurt (more of a dessert in our house though), Popsicles, and maybe some other treat we decide to bake if we are needing a fun activity while it RAINS at the end of May!

Sunday - Spaghetti @ mom's

Monday - Won Ton Soup (we didn't get it done last week... but it was worth the wait!)

Tuesday - Sausage and Peppers  (just slice the bell peppers with onions, some garlic, italian seasonings all cooked with mild italian sausages)

Wednesday - Beef Stroganoff with green beans or salad
{bake rolls for tomorrow}

Thursday - BBQ Shredded Pork on homemade rolls

Friday - Homemade Pizza

Saturday - Birthday Party and leftovers

menu plan monday

It's Monday again and I am back to post my menu for this week.  I never did get back to post about our smoothie pops but I will try to do that this week.   Pamela Donnis (Keeping Life Creative)  has a blog link up each week on Tuesdays with sneaky snacks... how do you sneak good stuff into your kids (or your) diets???  I will be linking up my smoothie pops for that.

We followed last weeks plan pretty well. The day we were scheduled to have meatballs, mashed potatoes and gravy it was so hot (ok not SO hot but 82 - which when the day before was 74 it was shocking). So instead of that we had fresh fruit (watermelon, pineapple, strawberries and pear).

This week our plan:

Sunday - Pancakes (will have to post the recipe sometime) and sausage (yep for dinner)

Monday - Chicken Enchiladas with spanish rice

Tuesday - Manicotti with homemade bread (I lost the recipe again... hope I can find it) and salad

Wednesday - Meatballs and mashed potatoes with gravy (we are trying again!)

Thursday - Won Ton Soup  It does take a little bit of prep work... but oh my it is so worth it!  The broth is just fabulous to sip (especially if you are not feeling well).  I know it is kinda hot for soup but I had been thinking about making this again, so I am!

Friday - Red beans and rice with cornbread

Saturday - BBQ Pork Sandwiches with baked beans

What is your favorite combination of spices when you cook up your red beans?  Mine always seem kind of bland.  So please share your favorite recipe (or spice combo).

This is the first time I have posted my menu plan here on this blog but I have been menu planning for about 2 years now possibly longer. There are times that I "forget"... I don't forget to eat but just don't have it all planned out for the week on Sunday.  I will say when I don't plan out the menu what we end up eating is not all that healthy, thus the reason I really try to have a menu plan each week.

So what are we having this week?

Sunday - Porcupine Meatballs (lunch) and then grilled hamburgers for dinner

Monday - Pork Chops (just pan grilled) with peas and carrots and mashed potatoes

Tuesday - Broccoli Beef

Wednesday - Relief Society activity - dinner will be served
                           Adam and the girls will have soup

Thursday - Meatballs (from the freezer) with gravy and mashed potatoes

Friday - Homemade Pizza (cheese and sausage/pepperoni)

Saturday - Relay for Life during the day so not sure what our plans will be for dinner

Breakfasts -
Cold cereal (not the healthiest but they do like {frosted} mini wheats) and I get it just about free with coupons
Eggs - these are always free - thanks mom (or I guess I should say thank you to her chickens!)
Healthy waffles  (our freezer is out so I will be making more this week)

Snacks/Dessert
Frozen Blueberries
Strawberries
Pineapple
Watermelon
Apples
Cheese Crackers
Smoothies or smoothie pops (watch for a post on Tuesday about them)
